Mookata – meaning pork skillt in Thai, refers to the Thailand’s version of barbeque grill surrounded by a steamboat moat. In Thailand, traditional mookata uses plain water as its soup based instead of a flavoured broth that most Singaporeans prefer.
When it comes to eating mookata, there are two types of people: the first drinks the soup while the other doesn’t. Pork lard is used to oil the grill, and as it cooks, the fats from the pork lard and the juices from the meats flow down into the soup based. Thus, making the soup not only flavourful but also very oily. Some people love it while others would skip it as they are health-conscious. I belong to the latter. What about you?
